  • 1 pound potato gnocchi
  • 4 ounces bacon, cut into 1 inch pieces
  • 1 pound ground beef
  • 1 cup onion, diced
  • 3 cloves garlic, chopped
  • 1 (14.5 ounce) can diced tomatoes
  • 1/4 cup ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional)
  • 1 cup beef broth (or water)
  • 1 cup cheddar cheese, shredded
  • 2 green onions, thinly sliced (optional)

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, cook bacon until crispy. Remove bacon, leaving 1 tablespoon of grease in the pan. Add ground beef and onion to the skillet. Cook until beef is browned and onions are tender. Drain excess grease.
  3. Stir in garlic and cook until fragrant, about 1 minute. Add cooked gnocchi, bacon, diced tomatoes, ketchup, mustard, Worcestershire sauce, paprika, salt, and pepper. If using, mix cornstarch with beef broth and add to the skillet. Bring to a boil, then reduce heat and simmer for 5 minutes or until sauce thickens slightly.
  4. Sprinkle shredded cheddar cheese over the mixture and allow it to melt. Garnish with sliced green onions. Serve hot, optionally garnished with diced tomatoes, pickles, or shredded lettuce.
