Ingredients
Scale
200g plain flour
2 large eggs
300ml milk
1 tbsp baking powder
1 tbsp caster sugar
50g unsalted butter, melted
1 tsp vanilla extract
Butter or oil, for greasing
100g caster sugar (for caramel sauce)
60ml double cream
50g unsalted butter (for caramel sauce)
1/2 tsp sea salt flakes (to taste)
2 ripe bananas, sliced
Whipped cream or ice cream (optional)
Instructions
In a large bowl, sift together the flour, baking powder, and caster sugar. In a separate bowl, whisk the eggs, milk, melted butter, and vanilla extract. Gradually mix the wet ingredients into the dry ingredients, stirring until just combined.
Preheat your waffle iron according to the manufacturer’s instructions. Lightly grease with butter or oil. Pour enough batter onto the hot waffle iron to cover the plates. Cook until golden and crisp.
Heat the caster sugar in a saucepan over medium heat, stirring constantly until it melts and turns amber. Add the butter and stir until melted. Gradually pour in the double cream while stirring. Cook for 1-2 more minutes until smooth. Stir in sea salt flakes to taste.
Place the waffles on serving plates. Top with sliced bananas and drizzle with salted caramel sauce. Optionally, add whipped cream or ice cream.
