2 tbsp olive oil
1 cup heavy cream
1 lb large shrimp, peeled and deveined
1/2 cup grated Parmesan cheese
1 lb cheese tortellini
Salt and pepper to taste
1/4 cup chopped fresh parsley
3 cloves garlic, minced
Instructions
Prepare the cheese tortellini according to the package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the shrimp and cook until they turn pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
In the same skillet, add the minced garlic and cook until fragrant, about 1 minute.
Pour in the heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally. Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
Add the cooked tortellini and shrimp to the skillet, tossing to coat them evenly with the Alfredo sauce.
Season with salt and pepper to taste. Sprinkle the chopped fresh parsley over the top before serving.
