2 cups heavy cream, divided
1 cup chocolate chips or chopped chocolate (dark, milk, semi-sweet, etc.)
1/8 teaspoon salt
4 egg yolks
1 teaspoon vanilla extract
1/4 cup granulated sugar
1/3 cup heavy cream
1 teaspoon vanilla extract
1/2 cup white sugar
3 tablespoons salted butter
2 tablespoons light corn syrup
1/4 teaspoon salt
Coarse salt (e.g., kosher salt)
Chocolate curls or shavings
Instructions
Melt the chocolate in the microwave at 50% power, stirring every 30 seconds until smooth. Line a muffin tin with liners. Spoon 1 1/2 tablespoons of melted chocolate into each liner, spreading it 3/4 up the sides. Let harden completely and peel away the liners.
In a medium bowl, whisk together the egg yolks and granulated sugar. Heat 1 cup of heavy cream with vanilla extract and salt until hot but not boiling. Gradually whisk half into the yolk mixture, then return to the saucepan. Cook until thickened and reaching 170ºF. Stir in chocolate chips until melted and smooth. Chill for 1-2 hours. Whip remaining heavy cream to stiff peaks and fold into the chocolate mixture.
Combine white sugar and light corn syrup in a saucepan over medium heat. Cook until a dark caramel forms. Add salted butter and heavy cream, stirring until smooth. Add salt and vanilla extract, then let cool slightly.
Spoon a layer of salted caramel into each chocolate cup, followed by a layer of chocolate mousse. Drizzle more caramel over the mousse and garnish with coarse salt and chocolate curls. Chill for at least 4 hours before serving.
