  • 1/4 cup granulated sugar
  • 1 cup milk
  • Vegetable oil for frying

Instructions

  1. Prepare the Cheesecake Filling: Beat the cream cheese, granulated sugar, and vanilla extract together until smooth. Scoop out small teaspoon-sized portions and place them on a parchment-lined baking sheet. Freeze for at least 1 hour.
  2. Make the Cookie Dough: In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg, egg yolk, and vanilla extract, mixing until well combined. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the mini chocolate chips.
  3. Assemble the Cookies: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper. Scoop about 2 tablespoons of cookie dough and flatten it into a circle. Place a frozen cheesecake filling ball in the center, then top with another flattened circle of cookie dough. Pinch the edges to seal. Repeat with the remaining dough and filling. Chill the assembled cookies in the refrigerator while preparing the frying batter.
  4. Prepare the Frying Batter: In a medium bowl, mix together the flour, baking powder, salt, and granulated sugar. Add the milk and stir until smooth.
  5. Fry the Cookies: Heat vegetable oil in a deep pan to 375°F (190°C). Dip each assembled cookie into the batter, shaking off excess. Carefully lower into the hot oil. Fry until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
