Ingredients
Scale
1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 cup milk (or dairy-free alternative)
1/2 cup vegetable oil
2 large eggs
2 tsp vanilla extract
1 cup chocolate chips (plus extra for topping)
Instructions
Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners or grease it.
In a large bowl, sift together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk together the milk, vegetable oil, eggs, and vanilla extract until well combined.
Pour the wet mixture into the dry ingredients and stir gently until just combined, being careful not to overmix.
Fold in the chocolate chips to ensure even distribution.
Divide the batter evenly among the muffin cups, filling each about 3/4 full, and sprinkle extra chocolate chips on top.
Bake for 18-20 minutes, testing for doneness with a toothpick.
Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack to cool completely.
