2 chicken breasts
1 cup spinach
1/3 cup grated Parmesan cheese
4 cloves garlic, minced
1 medium onion, minced
1/2 cup heavy cream
1/2 cup chicken broth
3 tablespoons butter, divided
1 small jar sun-dried tomatoes, drained and chopped
1 teaspoon oregano
Salt and pepper, to taste
Instructions
Season chicken breasts with salt, pepper, and 1/2 teaspoon oregano on both sides. In a large skillet, melt 2 tablespoons of butter with a bit of oil from the sun-dried tomatoes over medium-high heat. Add chicken breasts and cook for about 4 minutes on each side, or until browned and cooked through. Remove from the skillet and set aside.
In the same skillet, melt the remaining 1 tablespoon of butter. Add minced onion, garlic, and sun-dried tomatoes, and cook until the onion is translucent. Slowly pour in chicken broth, heavy cream, and Parmesan cheese. Stir well to combine and simmer for 2-3 minutes until the sauce is smooth. Season with additional salt and pepper if needed.
Add spinach to the sauce and cook until wilted. Return the chicken breasts to the skillet and heat through for another 2-3 minutes. Serve immediately.
