  • 1/4 cup vegetable oil
  • 3/4 cup all-purpose flour

  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (for filling)
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tablespoons cocoa powder (for dusting)
  • Chocolate shavings (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 10×15 inch jelly roll pan with parchment paper and lightly grease it.
  2. Beat the eggs and granulated sugar in a large bowl until thick and pale, about 3-4 minutes. Mix in the vegetable oil and vanilla extract until fully combined. Sift together the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture until just combined.
  3. Pour the batter into the prepared jelly roll pan and spread it evenly. Bake for 10-12 minutes, or until the cake springs back when lightly touched. Remove the cake from the oven and immediately transfer it to a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper. Roll the cake up in the towel from the short end and let it cool completely.
  4. In a medium bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  5. Unroll the cooled cake carefully. Spread the whipped cream filling evenly over the cake, leaving a small border around the edges. Gently roll the cake back up without the towel, ensuring the seam is on the bottom.
  6. Dust the rolled cake with cocoa powder. Optionally, add chocolate shavings on top for extra flair. Refrigerate for at least 1 hour to allow flavors to meld.
  7. Slice the Swiss roll into even pieces and serve chilled.
