  • 1 cup diced onion
  • ½ cup melted butter
  • 12 ounces sour cream
  • 1 teaspoon chicken base
  • 2 ½3 pounds russet potatoes
  • ¾ cup heavy cream
  • 8 ounces shredded cheddar cheese, divided
  • 1 teaspoon pepper
  • ½ teaspoon kosher salt

Instructions

  1. Preheat your oven to 375°F.
  2. Scrub and peel the russet potatoes if desired. Shred them using the large side of a box grater. Place the shredded potatoes in a colander, rinse thoroughly, and squeeze out any excess water. Transfer to a large mixing bowl.
  3. Add the diced onions and two-thirds of the shredded cheese to the potatoes. Set aside.
  4. In another bowl, whisk together the sour cream, heavy cream, melted butter, chicken base, pepper, and kosher salt until well combined.
  5. Pour the sour cream mixture over the potato mixture and stir until everything is evenly combined.
  6. Transfer the mixture to a greased 9×13-inch baking pan. Sprinkle the remaining shredded cheese on top. Bake in the preheated oven for 45 minutes to 1 hour, until the potatoes are cooked through and the top is golden brown.
