These delicious cheesecake stuffed chocolate chip cookies combine the rich creaminess of cheesecake with the classic flavor of chocolate chip cookies. Each bite offers a delightful surprise of creamy filling, making them a perfect treat for any occasion.

  • 3 oz cream cheese
  • 3 tablespoons powdered sugar
  • 1/2 cup butter, slightly softened
  • 1/2 cup brown sugar
  • 1/3 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 & 3/4 cups flour
  • 3 tablespoons cornstarch
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2/3 cup semi-sweet chocolate chips, plus more for topping

Instructions

  1. In a small bowl, mix together cream cheese and powdered sugar until smooth. Divide into 9 mounds on a parchment-lined plate. Freeze for 15-30 minutes.
  2. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a medium bowl, cream together butter, brown sugar, and granulated sugar until smooth. Add egg and vanilla extract, mixing until well combined. Gradually add flour, cornstarch, baking soda, and salt, stirring until just mixed. Fold in chocolate chips.
  3. Using a large cookie scoop, portion out dough and create wells in each ball. Place a frozen cheesecake mound into the center of each dough ball. Seal edges tightly. Arrange stuffed dough balls on the baking sheet. Bake for 11 minutes; cookies may appear underdone, which is fine. Immediately upon removal, top each cookie with additional chocolate chips. Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
