1/4 cup sugar
1 1/2 cups graham cracker crumbs
1/2 cup butter, melted
4 large eggs
32 oz cream cheese, softened
1 tsp vanilla extract
1 cup sugar
1/2 cup berry jam
1 cup mixed berries (raspberries, blackberries)
Instructions
Preheat your oven to 325°F (160°C). In a medium bowl, mix graham cracker crumbs with sugar and melted butter until well combined. Press the mixture into the bottom of a springform pan to form an even crust layer.
In a large mixing bowl, beat softened cream cheese, sugar, and vanilla extract until smooth. Add eggs one at a time, beating well after each addition.
Pour the cream cheese mixture over the prepared crust in the springform pan. Smooth the top with a spatula. Bake for 1 hour, or until the center is set and the edges are slightly golden.
Allow the cheesecake to cool completely in the pan. Once cooled, spread berry jam evenly over the top of the cheesecake. Arrange mixed berries on top of the jam layer.
