Ingredients
Scale
2 small ripe bananas (mashed, about 1/2 cup)
1/2 teaspoon cinnamon
1/2 cup unsalted butter (1 stick, softened)
1 teaspoon lemon juice
1 1/2 cups all-purpose flour
1/3 cup milk
1 cup granulated sugar
2 eggs
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup pecans (finely chopped, optional)
3 tablespoons unsalted butter (softened)
4 ounces cream cheese (softened)
1 teaspoon vanilla
1 1/2 cups powdered sugar
Instructions
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then add the milk, mashed bananas, and lemon juice. Mix well.
Gradually stir the flour mixture into the wet mixture and fold in the finely chopped pecans, if using.
Spread the batter evenly into the prepared pan and bake for 20 to 25 minutes, or until a toothpick comes out clean. Let cool completely.
For the frosting, beat the softened cream cheese and butter until smooth, then mix in the vanilla and a pinch of salt.
Gradually add the powdered sugar, mixing until smooth. Spread the frosting over the cooled bars, garnish with pecans if desired, slice, and serve.
