Bacon Scalloped Potatoes is a creamy and cheesy dish featuring layers of tender Yukon gold potatoes, crispy bacon, and a rich sauce. This comforting side dish is perfect for gatherings or family dinners, offering a delightful combination of flavors and textures.

  • 4 cups Yukon gold potatoes, cut into 1/8 to 1/4-inch thick slices
  • 1 teaspoon salt
  • 1 ½ cups whole milk
  • 1 tablespoon chopped chives, optional garnish
  • ½ pound thick sliced bacon, cut into small diced pieces
  • 1 cup sharp cheddar cheese, shredded
  • 3 tablespoons unsalted butter
  • 1 cup Monterey jack cheese, shredded
  • ¾ teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ cup all-purpose flour

Instructions

  1. Preheat oven to 350°F. Grease an 8×8 baking dish with cooking spray.
  2. In a skillet, cook diced bacon over medium heat until slightly crispy, about 8 to 9 minutes. Drain excess grease.
  3. In the same skillet, melt unsalted butter and whisk in flour. Slowly pour in milk while whisking until smooth. Add salt, onion powder, black pepper, and garlic powder. Thicken for 2 to 3 minutes.
  4. Layer half of the sliced potatoes in the prepared baking dish.
  5. Pour half of the sauce over the potatoes. Sprinkle half of the cheddar, Monterey jack cheese, and bacon. Repeat with remaining ingredients.
  6. Cover with aluminum foil and bake for 40 minutes. Remove foil and bake for an additional 30 minutes.
  7. Check potatoes for doneness. Top with remaining bacon and cheese. Return to oven for 5 minutes until cheese is melted.
  8. Let cool for 10 to 15 minutes before serving. Garnish with chopped chives if desired.
