This creamy white chocolate cheesecake is a delightful dessert featuring a buttery biscuit base and a luscious filling made with mixed berries and whipped cream. Topped with extra berries and a drizzle of melted white chocolate, it’s a perfect treat for any occasion.

  • 100g unsalted butter, melted
  • 250g digestive biscuits
  • 200g mixed berries (strawberries, raspberries, blueberries), washed and hulled if needed
  • 400g full-fat cream cheese, softened
  • 1 tsp vanilla extract
  • 200g white chocolate, melted and cooled
  • 200ml double cream, whipped
  • 100g icing sugar, sifted
  • 100g white chocolate, melted (for topping)
  • Extra mixed berries for decoration

Instructions

  1. Prepare the Base: Crush the digestive biscuits using a food processor or a rolling pin. Mix with melted butter until fully combined. Press the mixture evenly into the base of a 23cm springform cake tin. Chill in the fridge while you prepare the filling.
  2. Make the Filling: In a large bowl, beat the softened cream cheese until smooth. Gradually blend in the cooled melted white chocolate until well mixed.
  3. Whip the Cream: In a separate bowl, whip the double cream with icing sugar and vanilla extract until soft peaks form. Gently fold this whipped cream into the cream cheese mixture until smooth and creamy.
  4. Add the Berries: Carefully fold in the mixed berries, reserving some for decoration.
  5. Assemble the Cheesecake: Spoon the cheesecake mixture over the chilled biscuit base, smoothing the top with a spatula. Drizzle the melted white chocolate over the surface.
  6. Decorate and Chill: Arrange the reserved mixed berries on top of the cheesecake. Refrigerate for at least 4 hours or overnight until set.
  7. Serve: Before serving, run a knife around the edge of the tin to release the cheesecake. Transfer to a serving plate and enjoy!
