1/2 cup dry white wine
1 pound fresh crab meat
1 cup heavy cream
1 teaspoon paprika
4 cups seafood or chicken broth
2 garlic cloves, minced
2 tablespoons chopped fresh parsley
1 medium onion, finely chopped
2 celery stalks, finely chopped
4 tablespoons unsalted butter
1 tablespoon chopped fresh chives
2 tablespoons tomato paste
1/4 cup all-purpose flour
Salt and pepper to taste
1/2 teaspoon cayenne pepper (optional)
Lemon wedges, for serving
Instructions
In a large pot, melt the butter over medium heat. Add the chopped onion, celery, and garlic. Sauté until the vegetables are tender and translucent, about 5-7 minutes.
Stir in the flour and cook for another 2 minutes, stirring constantly, until the flour is well incorporated.
Gradually whisk in the seafood or chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes, allowing the flavors to meld.
Add the heavy cream, white wine, tomato paste, paprika, and cayenne pepper (if using). Simmer for another 10 minutes, stirring occasionally.
Using an immersion blender, blend the bisque until smooth and creamy. Season with salt and pepper to taste.
Gently fold in the fresh crab meat and let it heat through for 5 minutes. Be careful not to break up the crab too much.
Ladle the bisque into bowls and garnish with chopped parsley and chives. Serve with lemon wedges on the side.
