Instructions
Prepare the crust by mixing Oreo cookie crumbs with melted butter and pressing the mixture into the bottom of a 9-inch springform pan. Chill the crust in the refrigerator while preparing the filling.
Make the filling by beating the softened cream cheese in a large bowl until smooth. Add the granulated sugar and vanilla extract; mix until well combined. Add the eggs one at a time, beating well after each addition. Blend in the sour cream, heavy cream, and a few drops of blue food coloring until the desired shade is achieved.
Assemble the cheesecake by folding in 1 cup of mini chocolate chip cookies into the filling mixture. Pour the filling over the chilled crust in the springform pan and sprinkle the remaining mini chocolate chip cookies on top.
Bake the cheesecake in a preheated oven at 325°F (163°C) for 50-60 minutes, or until the center is almost set. Allow the cheesecake to cool at room temperature, then refrigerate for at least 4 hours before serving.
