  • 1 lb. linguine pasta
  • 1 lb. large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • ½ cup white wine
  • ½ cup chicken broth
  • ½ cup fresh parsley, chopped
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguine according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, melt 2 tablespoons of butter with olive oil. Add minced garlic and cook until fragrant, about 1 minute. Add shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp from skillet and set aside.
  3. Deglaze the skillet with white wine, scraping up any browned bits from the bottom. Add chicken broth and lemon juice, simmer for 2-3 minutes until slightly reduced. Stir in remaining butter until melted. Season with salt and pepper to taste.
  4. Toss cooked pasta and shrimp into the skillet with the sauce. Add lemon zest and chopped parsley, toss until everything is well coated.
  5. Serve hot, garnished with grated Parmesan cheese and additional parsley if desired.
