  • 2 cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 16 ounces cream cheese, room temperature
  • 2 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 1 cup light brown sugar, packed
  • ½ cup light corn syrup
  • ½ cup heavy cream
  • ¼ cup unsalted butter
  • 2 cups pecans, chopped
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper, securing it with cooking spray.
  2. In a food processor, pulse graham crackers with granulated sugar until fine crumbs form. Add melted butter and pulse until well combined. Press the mixture into the bottom of the prepared baking dish using the back of a spoon for even distribution. Bake for 10 minutes, then set aside to cool.
  3. In a mixing bowl, combine cream cheese, granulated sugar, eggs, vanilla extract, and salt. Mix on medium speed using a whisk attachment until smooth, about 5 minutes. Pour the cheesecake mixture over the cooled crust, smoothing it out with a spatula. Bake for 20-30 minutes until the cheesecake begins to set.
  4. In a small saucepan, combine brown sugar, corn syrup, heavy cream, butter, salt, and vanilla extract. Bring to a boil over medium heat, stirring constantly, then cook for an additional minute. Remove from heat and stir in the chopped pecans. Pour the pecan mixture over the cheesecake layer, smoothing with a spatula if necessary. Bake for 40 minutes until the pecan layer turns golden brown.
  5. Allow the bars to cool completely, then cover with plastic wrap or aluminum foil. Refrigerate for at least 4 hours or overnight.
  6. Cut into slices before serving.
