  • 2 cups cream cheese, softened
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup cold water
  • 2 cups cherry puree
  • 1/2 cup powdered sugar
  • 1 tablespoon gelatin
  • 2 cups heavy cream, chilled
  • 1 tablespoon lemon juice
  • 1 cup fresh cherries, pitted
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine the graham cracker crumbs, melted butter, and 1/4 cup granulated sugar until the mixture resembles wet sand. Press the mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Bake for 10 minutes, then set aside to cool.
  3. In a large bowl, beat the softened cream cheese and 1 cup granulated sugar until smooth and creamy. Add the vanilla extract and eggs, one at a time, beating well after each addition. Pour the cream cheese mixture over the cooled crust, smoothing the top with a spatula. Bake in the preheated oven for 60-70 minutes, or until the center is set and the edges are lightly browned. Let the cheesecake cool completely in the pan on a wire rack.
  4. In a small bowl, sprinkle the gelatin over the cold water and let it bloom for 5 minutes. Heat gently until the gelatin is completely dissolved. In a large bowl, mix the cherry puree and powdered sugar. Gradually add the dissolved gelatin, stirring until well combined. In another bowl, whip the chilled heavy cream until stiff peaks form. Gently fold the whipped cream into the cherry mixture until fully incorporated. Spread the cherry mousse evenly over the cooled cheesecake. Refrigerate for at least 4 hours or overnight to set.
  5. In a small saucepan, combine the pitted fresh cherries, 1/4 cup granulated sugar, and lemon juice. Cook over medium heat until the cherries release their juices and the mixture thickens, about 10 minutes. Allow it to cool completely. Before serving, spread the cherry topping over the mousse layer.
