  • 1/2 cup diced fresh peaches
  • 1/4 cup powdered sugar
  • 1 tablespoon milk
  • 1/2 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup buttermilk
  • 2 tablespoons honey for drizzle
  • Sugar crystals for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat together softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs, one at a time, ensuring each is fully incorporated. Stir in the vanilla extract.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, starting and ending with the flour mixture. Mix until just combined.
  6. Spoon batter into each cupcake liner, filling halfway. Add a dollop of peach preserves on top, then cover with more batter until each liner is three-quarters full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow cupcakes to cool completely.
  8. Beat together softened cream cheese, powdered sugar, and milk until smooth and creamy.
  9. Frost the cooled cupcakes with the cream cheese mixture. Top with diced fresh peaches.
  10. Drizzle honey over the frosted cupcakes and sprinkle with sugar crystals.
