Muddy Buddy Cookies are a delightful treat featuring a rich peanut butter cookie base topped with a smooth milk chocolate center. These cookies are perfect for any occasion, offering a delicious combination of flavors and textures that will satisfy your sweet tooth.

  • 1/2 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 1½ cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 cup milk chocolate chips
  • 1/2 teaspoon canola or vegetable oil
  • 1/2 cup powdered sugar

Instructions

  1. Preheat your oven to 375°F (190°C). Line a cookie sheet with parchment paper or spray it with cooking spray.
  2. In a large bowl, blend together softened butter, creamy peanut butter, granulated sugar, and light brown sugar until light and creamy. Beat in the egg until well combined. In a separate bowl, whisk together flour, baking powder, and baking soda. Gradually add to the wet ingredients, beating on low speed until fully combined. Roll about 1 tablespoon of dough into a ball and place 12 dough balls onto the prepared cookie sheet. Bake for 8 minutes.
  3. Immediately after baking, press each cookie gently with a small flat-bottomed cup to flatten and create crinkly edges. Let the cookies cool completely on the sheet for about an hour.
  4. Melt milk chocolate chips and canola oil in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted and smooth. Spoon a small amount of melted chocolate onto the center of each cookie, spreading gently.
  5. Place the cookies in the refrigerator for about 15 minutes to allow the chocolate to set. Remove from the fridge and dust with powdered sugar before serving.
