  • 2 large eggs
  • ½ cup coconut milk, plus extra for adjusting sauce consistency
  • Vegetable oil, for frying
  • 4 oz. cream cheese, softened
  • ½ cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Soak the pineapple rings in pineapple juice for at least 1 hour, then drain and pat dry.
