  • 6 slices bacon, cooked and crumbled
  • ¼ cup salted butter, divided
  • 1 large sweet onion, cut into quarters and sliced thin
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground pepper
  • 1 ½ cups whole milk
  • ½ cup heavy cream
  • 7 ounces gruyere cheese, shredded

Instructions

  1. In a deep skillet, melt 2 tablespoons of butter over medium heat. Add sliced onions and minced garlic, cooking and stirring often until deeply caramelized. Remove from the pan and set aside.
  2. In the same skillet, add the remaining 2 tablespoons of butter, flour, salt, and pepper. Cook over medium heat, whisking constantly, for about 2 minutes until fragrant. Gradually add whole milk and heavy cream, whisking continuously until the sauce thickens.
  3. Whisk in shredded gruyere cheese until smooth and fully melted, creating a creamy cheese sauce.
  4. Add the caramelized onions and crumbled bacon to the cheese sauce, stirring well to combine. Mix in the cooked and drained macaroni, stirring for about 2 minutes until everything is well coated and heated through.
