2 tbsp instant custard powder
1/4 cup white sugar
2/3 cup heavy cream
1/3 cup melted butter
1 cup milk
1 tsp ground cinnamon
1/3 cup powdered sugar
2 egg yolks
5 large filo pastry sheets
Instructions
In a saucepan, heat the milk and heavy cream until it reaches a simmer. In a bowl, whisk together the egg yolks, white sugar, and custard powder until smooth. Gradually pour the hot milk mixture into the egg mixture, whisking constantly. Return the mixture to the saucepan and cook over low heat, stirring continuously until thickened. Cover the custard with parchment paper to prevent a skin from forming and chill in the refrigerator.
Preheat your oven to 350°F (175°C). Mix the powdered sugar and ground cinnamon in a small bowl. Brush a 9-inch cake tin with melted butter. Layer the filo sheets in the cake tin, brushing each sheet with melted butter and dusting with the cinnamon-sugar mixture. Pour the chilled custard into the prepared filo crust. Scrunch the overhanging filo pastry to enclose the custard filling.
Place the assembled pie in the preheated oven and bake for 30-35 minutes, or until the filo pastry is golden and crisp. Remove from the oven and allow the pie to cool. Before serving, dust the top with additional powdered sugar for a beautiful finish.
