  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups Oreo cookie crumbs
  • 1/2 cup blueberry puree
  • 8 oz white chocolate, melted
  • 24 oz cream cheese, softened
  • 4 large eggs
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1 cup granulated sugar
  • Fresh blueberries for topping
  • Whipped cream for topping
  • Blueberry sauce (optional)

Instructions

  1. Preheat your oven to 325°F (163°C). In a medium bowl, mix Oreo cookie crumbs with melted butter until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let it cool.
  2. Beat the softened cream cheese in a large mixing bowl until smooth. Gradually mix in granulated sugar and vanilla extract until well incorporated. Add eggs one at a time, beating on low speed after each addition. Blend in sour cream and melted white chocolate until the mixture is smooth and creamy.
  3. Pour half of the cheesecake filling over the cooled crust. Drop spoonfuls of blueberry puree onto the filling. Use a knife or skewer to swirl the puree gently. Pour the remaining cheesecake filling over the blueberry layer, and repeat with the remaining blueberry puree for a beautiful swirl.
  4. Place the springform pan inside a large roasting pan. Fill the roasting pan with hot water halfway up the sides of the springform pan. Bake for 50-60 minutes, until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Remove the cheesecake from the oven and water bath. Cool completely on a wire rack, then refrigerate for at least 4 hours, or overnight.
  5. Before serving, garnish with fresh blueberries, dollops of whipped cream, and a drizzle of blueberry sauce if desired.
  6. Slice and enjoy this elegant dessert chilled.
