1 1/2 cups crushed graham crackers
1/3 cup unsalted butter, melted
2 packages (8 ounces each) cream cheese, softened
2 eggs
2/3 cup granulated sugar
1 tablespoon lemon zest
1 teaspoon vanilla extract
1/4 cup lemon juice
1/4 cup lemon curd
Instructions
Preheat your oven to 325°F (163°C) and grease an 8×8 inch baking dish.
In a bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish. Bake for 10 minutes. Allow to cool.
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract, lemon zest, and lemon juice until fully incorporated. Pour the cheesecake mixture over the cooled crust, spreading it evenly.
Spoon dollops of lemon curd randomly over the cheesecake layer. Use a toothpick or knife to gently swirl the lemon curd into the cheesecake mixture, creating a marbled effect.
Bake in the preheated oven for 35-40 minutes, or until the center is just set and the edges are lightly browned. Remove from the oven and allow to cool completely at room temperature. Refrigerate for at least 3 hours, or until fully chilled.
