  • 200g dark chocolate, chopped
  • 1/2 cup milk
  • 2 cups thickened cream
  • 1/4 cup caster sugar
  • 4 eggs, separated
  • 1/2 teaspoon cream of tartar
  • 200g milk chocolate, chopped
  • Cocoa powder, for dusting

Instructions

  1. Grease and line the base and side of a 22cm springform pan.
  2. Melt the dark chocolate with milk over simmering water. Stir until smooth, then remove from heat. Whisk egg yolks and caster sugar until thick and pale, then fold into the chocolate mixture. Beat egg whites with cream of tartar until soft peaks form, then gently fold into the chocolate mixture. Pour into the prepared pan, smooth the surface, and refrigerate for 2 hours or until set.
  3. Melt the milk chocolate over simmering water and let cool slightly. Whisk thickened cream until soft peaks form, then fold in the cooled milk chocolate. Spread over the set dark chocolate mousse, smooth the surface, and refrigerate for 4 hours or until firm.
  4. Dust with cocoa powder before serving.
