½ cup granulated sugar
2 tablespoons vegetable oil
2 ½ tablespoons sugar
½ teaspoon salt
1 cup all-purpose flour
1 teaspoon ground cinnamon
1 cup water

Instructions
In a medium bowl or a brown paper bag, combine the ½ cup granulated sugar and 1 teaspoon ground cinnamon. Set aside.
Heat about 2-1/2 inches of oil in a deep-fryer or heavy-bottomed pot to 375°F.
In a small saucepan over medium heat, combine water, 2-1/2 tablespoons sugar, salt, and vegetable oil. Bring the mixture to a boil, then remove from heat. Stir in the flour until the mixture forms a ball.
Allow the dough to cool slightly. Scoop and lightly roll the dough into balls about the size of walnuts.
Carefully place 3-4 dough balls into the hot oil, making sure not to overcrowd the pan. Fry until golden brown, about 2-3 minutes, turning as needed.
Remove the fried dough balls from the oil with a slotted spoon and immediately toss them in the reserved cinnamon-sugar mixture until well coated.
Transfer the coated Churros Poppers to a plate and repeat the frying and coating process with the remaining dough balls.
Serve the Churros Poppers immediately while still warm.
