  • 1 package phyllo dough
  • 1 cup melted butter
  • 2 cups mixed nuts (walnuts, pistachios, almonds), finely chopped
  • 1 teaspoon ground cinnamon
  • 1/2 cup sugar
  • 1 cup honey
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Brush each sheet of phyllo dough with melted butter and layer 3-4 sheets together.
  2. In a bowl, mix the finely chopped nuts, ground cinnamon, and 1/2 cup of sugar. Spread this mixture evenly over the layered phyllo sheets.
  3. Roll up the phyllo dough tightly to form logs and place them in a greased baking dish. Bake for 30-35 minutes or until the rolls are golden brown and crispy.
  4. While the baklava rolls are baking, combine honey, water, the remaining 1/2 cup of sugar, vanilla extract, and lemon juice in a saucepan. Bring to a simmer and let it cook for about 10 minutes, until slightly thickened.
  5. Once the baklava rolls are baked, pour the warm syrup over them. Let them soak for a few hours, or until fully absorbed. Slice into desired pieces and serve.
