1 lb chicken breasts, thinly sliced
Salt and pepper to taste
2 tablespoons olive oil
3 cloves garlic, minced
1 cup chicken broth
1 cup heavy cream
1/2 cup sun-dried tomatoes, chopped
1/4 cup freshly grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes (optional)
8 oz penne pasta, cooked and drained
Fresh basil for garnish
Instructions
Season chicken breasts with salt and pepper.
In a large skillet, heat olive oil over medium-high heat. Add chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove chicken and set aside.
In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
Pour in chicken broth to deglaze the pan, scraping up any browned bits. Add heavy cream, sun-dried tomatoes, Parmesan, Italian seasoning, and red pepper flakes. Bring to a simmer and let sauce thicken, about 5 minutes.
Return chicken to the skillet and simmer for another 3 minutes.
Toss cooked pasta in the sauce, then garnish with fresh basil before serving.
