  • 4 skinless, boneless chicken breast halves
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour, for dredging
  • 4 tablespoons butter, divided
  • 4 tablespoons olive oil, divided
  • 1 cup sliced mushrooms
  • 1/2 cup Marsala wine
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley, for garnish (optional)

Instructions

  1. Season chicken breast halves with salt and pepper. Dredge each piece in flour until well coated, shaking off excess.
  2. In a large skillet over medium-high heat, heat 2 tablespoons of butter and 2 tablespoons of olive oil. Add chicken breasts and cook for about 5 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, melt the remaining 2 tablespoons of butter and add the remaining 2 tablespoons of olive oil. Add sliced mushrooms and cook until tender and browned, about 5-7 minutes.
  4. Pour Marsala wine into the skillet, stirring to deglaze the pan. Simmer for a few minutes to reduce slightly.
  5. Stir in chicken broth, bring to a boil, then reduce heat to medium-low and simmer for about 10 minutes to reduce the sauce.
  6. Stir in heavy cream, simmer for another 5 minutes until the sauce thickens slightly.
  7. Return cooked chicken breasts to the skillet, spooning sauce and mushrooms over the top. Simmer for a few more minutes to heat through and meld flavors.
  8. Remove from heat, garnish with chopped fresh parsley if desired, and serve hot with the creamy Marsala sauce spooned over the chicken breasts.
