Ingredients

Scale
  • 8 slices thick-cut bread (such as brioche or French bread)
  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup blackberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 4 large eggs
  • 1 cup milk
  • 1/2 tsp ground cinnamon
  • Butter or oil, for cooking
  • Maple syrup, for serving

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture evenly onto 4 slices of bread. Top with the remaining bread slices to form sandwiches.
  3. In a separate saucepan, combine the blackberries, granulated sugar, and lemon juice. Cook over medium heat, stirring occasionally, until the blackberries break down and form a compote. Remove from heat and set aside.
  4. In a shallow dish, whisk together the eggs, milk, and ground cinnamon.
  5. Dip each sandwich into the egg mixture, ensuring both sides are evenly coated.
  6. Heat a skillet or griddle over medium heat and melt butter or heat oil.
  7. Cook the French toast sandwiches for 3-4 minutes on each side, or until golden brown and the cream cheese is softened.
  8. Serve the French toast hot, topped with the blackberry compote and maple syrup.
