Ingredients
Scale
1 9-inch all-butter pie crust
1 teaspoon vanilla extract
1 large egg
½ teaspoon salt
½ cup granulated sugar
½ cup packed brown sugar
½ teaspoon baking soda
⅓ cup unsalted butter, melted
1 ½ cups all-purpose flour
1 ½ cups chocolate chips, plus extra for topping
Instructions
Prepare Crust: Place pie crust in a pie plate, crimp the edges, and chill until ready to fill.
Make Cookie Batter: In a large bowl, combine melted butter, granulated sugar, and brown sugar. Mix until smooth. Add the egg, vanilla, baking soda, and salt. Mix well. Gradually stir in the flour until the mixture is thick. Fold in the chocolate chips.
Assemble and Bake: Spread the cookie batter into the prepared pie crust. Sprinkle extra chocolate chips on top. Cover with a pie shield and bake in a preheated oven at 425°F for 10 minutes, then reduce the heat to 350°F and bake for an additional 25 minutes or until the top is light golden brown.
Cool and Serve: Let the pie cool to room temperature before slicing. Serve as is or with ice cream, chocolate sauce, or whipped cream.
