1 can cherry pie filling
1 cup powdered sugar
1 ½ cups vanilla wafer crumbs
1 stick butter (1/2 cup), melted
8 ounces cream cheese, softened
1 cup finely chopped pecans
½ cup chopped pecans (for the top)
3 cups milk
2 small boxes cheesecake flavored pudding mix
16-ounce container whipped topping
Instructions
In a medium mixing bowl, combine the vanilla wafer crumbs, 1 cup finely chopped pecans, and melted butter. Press the mixture firmly into the bottom of a 9×13 inch pan to form the crust. For a baked crust: Bake at 350°F for 10-12 minutes, then refrigerate until cooled to room temperature. For a no-bake crust: Refrigerate for at least 1 hour until firm.
In a separate mixing bowl, blend the cream cheese, powdered sugar, and 1 1/2 cups of whipped topping until smooth. Spread this mixture evenly over the cooled crust.
In another bowl, whisk together the cheesecake pudding mix, milk, and 1 cup of whipped topping until smooth. Spread this evenly over the cream cheese layer in the pan.
Top with the cherry pie filling, then spread the remaining whipped topping over the cherries. Sprinkle the top with 1/2 cup chopped pecans.
Refrigerate for at least 4 hours or overnight to allow the layers to set and flavors to meld.
