Ingredients

Scale
  • 1 pint ground Parmesan
  • 1 quart heavy cream
  • 1 tsp sharp provolone
  • 1 cup flour
  • 2 eggs
  • 1 quart elbow pasta
  • 2 cups Velveeta
  • 2 cups panko

Instructions

  1. In a large saucepan, melt the Parmesan, Velveeta, and provolone with heavy cream over low heat until smooth and creamy.
  2. Cook the elbow pasta according to package instructions until soft. Drain and mix the cooked pasta with the cheese sauce.
  3. Spread the mac and cheese mixture evenly on a sheet pan. Freeze until the mixture is about 75% solid.
  4. Cut the partially frozen mac and cheese into fry-sized sticks. Place the sticks back in the freezer and freeze completely.
  5. Set up a breading station with three bowls: one with flour, one with beaten egg, and one with panko. Coat each mac and cheese stick in flour, dip in egg, and then roll in panko until well-coated.
  6. Heat oil in a deep fryer or large pot to 350°F. Fry the breaded mac and cheese sticks in batches for about 4 minutes or until golden brown and crispy. Remove from oil and drain on paper towels.
  7. Serve hot, paired with your favorite dipping sauce.
