Ingredients
Scale
1 loaf French bread, sliced in half lengthwise
4 tablespoons butter, softened
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
1 tablespoon chopped parsley
1 pound shrimp, peeled and deveined
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon paprika
1 cup shredded Monterey Jack cheese
Additional butter for grilling
Instructions
Preheat your oven to 375°F (190°C). In a small bowl, blend together the softened butter, minced garlic, Parmesan cheese, and chopped parsley. Spread this garlic butter mixture generously over the cut sides of the French bread. Arrange the bread halves on a baking sheet and bake for 10-12 minutes, or until the edges are golden and crispy.
Heat olive oil in a skillet over medium heat. Season the shrimp with salt, pepper, and paprika. Cook the shrimp for 2-3 minutes on each side, until they are pink and opaque. Remove from heat and set aside.
On one half of the garlic bread, layer the cooked shrimp evenly and sprinkle with shredded Monterey Jack cheese. Place the other half of the garlic bread on top, pressing down gently to help it adhere. Heat a skillet over medium heat and add a small amount of butter. Carefully place the sandwich in the skillet and grill for 3-4 minutes on each side, or until the cheese is melted and the bread is golden brown and crispy.
