  • 8 oz spaghetti or your favorite pasta
  • 2 lobster tails, cooked and meat removed
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1/4 cup white wine
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Fresh parsley, chopped
  • Salt and pepper, to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat butter and olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute. Add lobster meat to the skillet and cook for 2-3 minutes until heated through. Remove lobster from skillet and set aside.
  3. In the same skillet, add cherry tomatoes and cook for 2-3 minutes until they start to soften. Pour in white wine and cook until it reduces by half.
  4. Add heavy cream to the skillet and stir to combine. Cook for another 2-3 minutes until sauce thickens slightly. Season with salt and pepper to taste.
  5. Add cooked pasta to the skillet and toss to coat in the sauce. Return lobster meat to the skillet and gently toss to combine. Sprinkle with grated Parmesan cheese and chopped parsley.
