  • 3 large Honeycrisp apples, peeled, cored, and cut into eighths
  • 2 tbsp packed light brown sugar
  • 24 oz cream cheese, at room temperature
  • ¾ cup packed light brown sugar
  • 6 tbsp granulated sugar
  • 3 tbsp apple cider
  • 2 tsp pure vanilla extract
  • 2 tsp ground cinnamon
  • 3 large eggs
  • ¾ cup sour cream
  • ⅓ cup heavy cream
  • Caramel sauce for drizzling

Instructions

  1. Prepare the crust by buttering the springform pan and mixing gingersnap crumbs with brown sugar and melted butter. Press into the pan and freeze.
  2. Caramelize the apples by cooking them in butter and brown sugar until golden brown.
  3. Preheat the oven and prepare the springform pan with aluminum foil.
  4. Make the filling by beating cream cheese, sugars, apple cider, vanilla, and cinnamon, then adding eggs and creams.
