  • 6 tablespoons unsalted butter, melted
  • 24 ounces cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh blackberries
  • 1 cup fresh blackberries (for topping)
  • 2 tablespoons granulated sugar (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a medium bowl, mix together the graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of the prepared springform pan.
  3. Bake the crust in the preheated oven for 8-10 minutes, then remove and let it cool.
  4. In a large mixing bowl, beat the softened cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gently fold in the fresh blackberries until evenly distributed throughout the batter.
  6. Pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula.
  7. Bake the cheesecake in the preheated oven for 45-50 minutes, or until the edges are set and the center is slightly jiggly. Let it cool completely at room temperature, then refrigerate for at least 4 hours.
  8. In a small saucepan, combine the fresh blackberries and granulated sugar for the topping. Cook over medium heat until the blackberries break down and form a thick sauce, about 5-7 minutes. Strain the sauce to remove solids.
  9. Once the cheesecake is chilled and set, carefully remove it from the springform pan. Drizzle the blackberry sauce over the top and garnish with fresh blackberries. Slice and serve chilled.
