This gourmet grilled cheese combines the creamy richness of Brie cheese with a sweet and tangy blackberry balsamic sauce, all nestled between slices of toasted multigrain bread. Perfect for a quick lunch or a fancy snack, this dish is both satisfying and delightful.

  • 8 slices of multigrain bread
  • 1 cup of fresh blackberries
  • 200 grams of Brie cheese, sliced
  • 4 tablespoons of balsamic vinegar
  • 2 tablespoons of sugar
  • 1 tablespoon of fresh thyme leaves
  • Butter, for spreading on the bread

Instructions

  1. In a small saucepan, combine the blackberries, balsamic vinegar, sugar, and half of the thyme. Cook over medium heat for 10 minutes until the blackberries are soft and the sauce has thickened. Set aside to cool.
  2. Butter one side of each bread slice.
  3. Heat a skillet or griddle over medium heat.
  4. Place a slice of bread, butter side down, on the skillet. Add a layer of Brie cheese, followed by a spoonful of the blackberry balsamic mixture, and sprinkle some thyme leaves.
  5. Top with another slice of bread, butter side up.
  6. Grill until the bread is golden brown and the cheese has melted, about 3-4 minutes per side. Press down with a spatula occasionally.
  7. Repeat with the remaining bread and filling.
  8. Slice in half and serve warm.
