1 cup fresh strawberries, chopped
3 large eggs
3 ripe bananas, mashed
24 oz cream cheese, softened
1 tablespoon lemon juice
1/4 cup granulated sugar
1 1/2 cups graham cracker crumbs
1 cup granulated sugar
1/2 cup unsalted butter, melted
1 teaspoon vanilla extract
Whipped cream, for garnish
Fresh strawberries, for garnish
Instructions
Preheat your oven to 350°F (175°C).
In a medium bowl, mix the graham cracker crumbs, 1/4 cup sugar, and melted butter until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Set aside.
In a small bowl, mix the mashed bananas and lemon juice. In a large bowl, beat the softened cream cheese and 1 cup of sugar until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract. Gently fold in the banana mixture and chopped strawberries until evenly distributed.
Pour the cheesecake filling over the prepared crust in the springform pan. Bake in the preheated oven for 55-60 minutes, or until the center is almost set. Remove from the oven and let the cheesecake cool completely.
Refrigerate the cooled cheesecake for at least 4 hours, or overnight for best results. When ready to serve, garnish with whipped cream and fresh strawberries.
