  • 4 Idaho® Baking Potatoes
  • 1 pound cooked ground beef (seasoned with ½ teaspoon salt and ¼ teaspoon garlic)
  • 6 slices bacon, cooked and crumbled
  • 1 cup sour cream
  • ½ cup melted butter
  • 1 ⅓ cup shredded Colby-Jack cheese (divided use)
  • ½ cup barbecue sauce
  • 2 green onions, sliced
  • ½ teaspoon kosher salt
  • ½ teaspoon granulated garlic
  • ¼ teaspoon fresh ground pepper

Instructions

  1. Preheat oven to 400°F.
  2. Scrub potatoes clean, place on a baking sheet, and bake for about 1 hour until cooked through. Remove and let cool slightly. Lower oven temperature to 375°F.
  3. Cut potatoes lengthwise, scoop out insides into a mixing bowl. Add butter, sour cream, 1 cup of cheese, garlic, salt, and pepper. Mash or whip until smooth.
  4. Spoon the filling back into the potato shells, placing them on a baking sheet.
  5. Mix cooked ground beef with barbecue sauce, spoon over potatoes. Sprinkle with remaining cheese, bacon, and green onions.
  6. Bake for 20-25 minutes until heated through and cheese is melted.
