Ingredients
Scale
2 1/2 cups granulated sugar
2 1/2 cups all-purpose flour
1 cup buttermilk, room temperature
2 teaspoons baking powder
1 teaspoon salt
1 cup unsweetened cocoa powder
1 1/2 teaspoons baking soda
2 large eggs, room temperature
1 cup boiling water
2 teaspoons vanilla extract
1/2 cup vegetable oil
1 teaspoon black gel food coloring
1 cup unsalted butter, softened
4 cups powdered sugar
1 cup unsweetened cocoa powder
1/2 cup heavy cream
2 teaspoons vanilla extract
Pinch of salt
Fresh flowers (optional)
Edible glitter (optional)
Instructions
Preheat your oven to 350°F (175°C) and grease and line three 9-inch round cake pans with parchment paper.
In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the buttermilk, vegetable oil, eggs, and vanilla extract. Beat on medium speed until well combined. Gradually add the boiling water to the batter, mixing until smooth. Stir in the black gel food coloring until evenly distributed.
Divide the batter evenly among the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
In a large bowl, beat the butter until creamy. Gradually add the powdered sugar and cocoa powder, mixing on low speed until combined. Increase the speed to medium and add the heavy cream, vanilla extract, and salt. Beat until the frosting is light and fluffy.
Place one cake layer on a serving plate. Spread a generous amount of frosting over the top. Repeat with the second and third layers. Frost the top and sides of the cake, smoothing with an offset spatula.
If desired, decorate the cake with fresh flowers and a sprinkle of edible glitter.
