Homemade fresh egg noodles are a delightful and versatile addition to any meal. Made with high gluten flour and eggs, these noodles are easy to prepare and can be customized to your preferred thickness. Perfect for soups, stir-fries, or served with your favorite sauce, they offer a fresh taste that store-bought noodles can’t match.

Ingredients

  • 500 g high gluten flour
  • 3 medium-sized eggs
  • 100 g water
  • 1 tsp salt
  • 50100 g flour (for adjusting water and flour ratio)
  • 1/2 cup cornstarch (for preventing stickiness)

Instructions

  1. In a KitchenAid mixing bowl, combine the high gluten flour, eggs, water, and salt. Mix until roughly combined.
  2. Attach the dough hook and knead at low speed for 15-18 minutes, adjusting water and flour as needed to achieve a firm, non-sticky dough.
  3. Cover the dough and let it rest for 30 minutes.
  4. Divide the dough into 6 equal pieces and flatten each piece.
  5. Set the pasta roller to the widest setting and pass the dough through, folding and repeating until rectangular.
  6. Dust with cornstarch to prevent sticking.
  7. Gradually adjust the thickness setting and pass through until desired thinness is achieved.
  8. Change the attachment to cut the sheets into noodles.
  9. Dust the noodles with cornstarch to prevent sticking.
  10. Cook the homemade egg noodles according to your preferred method.
