Ingredients

Scale
  • 1 pound pork sausages
  • 4 large potatoes, peeled and sliced
  • 8 slices of bacon, chopped
  • 2 large onions, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup water
  • 1 teaspoon dried parsley
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the chopped bacon over medium heat until crisp. Remove bacon and set aside, leaving the bacon fat in the skillet.
  3. In the same skillet, brown the sausages in the bacon fat. Once browned, set the sausages aside with the bacon.
  4. Add the sliced onions and minced garlic to the skillet. Sauté until the onions are translucent.
  5. In a large baking dish, layer half of the sliced potatoes, followed by half of the sautéed onions and garlic, bacon, and sausages. Repeat the layering with the remaining ingredients.
  6. Pour the chicken broth and water over the layers. Sprinkle with dried parsley, thyme, salt, and pepper.
  7. Cover the dish with foil and bake in the preheated oven for about 1 hour, or until the potatoes are tender.
  8. Let the coddle rest for a few minutes before serving.
