This Kielbasa Sausage Cheesy Potato Casserole combines savory kielbasa with creamy, cheesy potatoes for a comforting and hearty meal. It’s perfect for family gatherings or a cozy dinner at home.

Ingredients

  • 1 cup chicken broth
  • 1 cup sharp cheddar cheese
  • 3 large potatoes, peeled and diced into ½" cubes
  • 1 tsp Slap Ya Mama® seasoning
  • 1 lb kielbasa sausage, cut into ¼" thick slices, then each piece into 4
  • ½ cup water (adjust as needed)
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 cup diced onions
  • 10.5 oz can cheddar cheese soup (use half a can)
  • 1 tsp pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly spray a 13 x 9-inch baking dish with non-stick cooking spray.
  2. In a large Dutch oven, cook the sliced kielbasa with about ½ cup water over medium heat until browned.
  3. Add the diced onions and cook for 3-4 minutes until softened, then stir in the minced garlic.
  4. Add the diced potatoes and stir to combine.
  5. Pour in the chicken broth, heavy cream, and half a can of cheddar cheese soup. Season with Slap Ya Mama® seasoning and pepper, then stir well.
  6. Cook over low heat until the mixture begins to boil, then turn off the heat and stir in the sharp cheddar cheese until melted.
  7. Pour the mixture into the prepared baking dish, sprinkle additional cheddar cheese on top if desired, cover with foil, and bake for 65-75 minutes.
  8. Remove the foil and bake for an additional 10 minutes to crisp up the top.
  9. Let cool slightly before serving.
