1 tablespoon olive oil
1 onion, diced
2 carrots, peeled and diced
2 stalks celery, diced
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
6 cups chicken or vegetable broth
1 (14.5 ounce) can diced tomatoes, undrained
1 cup dry pasta (such as ditalini or orzo)
1 pound small meatballs (beef or turkey)
2 cups spinach, chopped
1/4 cup grated Parmesan cheese, for serving
Instructions
Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Sauté until vegetables are softened, about 5 minutes.
Stir in minced garlic, dried oregano, dried basil, salt, and pepper. Cook for another minute until fragrant.
Pour in chicken or vegetable broth and add diced tomatoes with their juices. Bring to a boil.
Add dry pasta and small meatballs to the pot. Reduce heat to simmer and cook for 10 minutes, or until pasta is tender and meatballs are cooked through.
Stir in chopped spinach and cook until wilted, about 2 minutes.
