This hearty Hamburger Potato Casserole combines layers of seasoned ground beef, thinly sliced russet potatoes, and melted cheddar cheese, all enveloped in a creamy mushroom sauce. It’s a comforting dish perfect for family dinners or gatherings.

  • 1 1/2 pounds ground beef
  • 4 large russet potatoes, peeled and thinly sliced
  • 2 cups shredded cheddar cheese
  • 1 can (10.75 oz) condensed cream of mushroom soup
  • 3/4 cup milk
  • 1 medium onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9×13 inch baking dish with olive oil.
  2. In a large skillet over medium heat, add olive oil and cook the ground beef with chopped onion until browned. Drain excess fat.
  3. Stir in salt, pepper, garlic powder, and paprika into the beef mixture. Spread half of this mixture in the prepared baking dish.
  4. Layer half of the sliced potatoes over the beef, sprinkle with 1 cup of cheddar cheese, add the remaining beef mixture, and top with the remaining potato slices.
  5. In a small bowl, whisk together the cream of mushroom soup and milk until smooth. Pour this mixture over the potato layers.
  6. Cover the dish with aluminum foil and bake for 1 hour.
  7. Remove the foil, sprinkle the remaining cheddar cheese on top, and bake uncovered for an additional 20-30 minutes until bubbly and tender.
  8. Let the casserole stand for 10 minutes before serving and garnish with chopped fresh parsley.
