1 lb. ground beef, 85% lean
1.5 teaspoons Italian seasoning
Salt
Pepper
3 tablespoons butter, divided
¾ cup onions, diced
1 tablespoon garlic, minced
2 ½ cups beef broth
1 ¼ cups uncooked white long grain rice
8 oz. sliced button mushrooms, washed
10.5 oz. cream of mushroom soup
½ cup milk
½ cup sour cream
2 cups cheddar cheese, divided
Instructions
Preheat oven to 350°F (175°C).
Brown ground beef with Italian seasoning, salt, and pepper in a large pot; drain and set aside.
In the same pot, melt 2 tbsp butter. Sauté onions until softened, then add garlic and cook for 1 minute. Stir in beef broth, remaining butter, and rice. Bring to a boil, then reduce heat, cover, and simmer for 10 minutes.
Stir in mushrooms, cover, and cook for an additional 5-10 minutes until rice is tender. Remove from heat and let sit for 10 minutes.
Stir in cooked ground beef, cream of mushroom soup, milk, sour cream, and half of the cheddar cheese.
Transfer mixture to a greased 9×13 casserole dish. Top with remaining cheddar cheese. Cover with foil and bake for 20 minutes.
