1 can diced tomatoes
1 ½ cups shredded cheddar cheese
2 cups beef broth
½ tsp dried oregano
½ yellow bell pepper, chopped
2 tsp minced garlic
½ red bell pepper, chopped
½ green bell pepper, chopped
½ tsp dried basil
Salt and pepper to taste
1 onion, chopped
⅔ cup rice
Instructions
In a skillet over medium-high heat, cook ground beef, onion, and chopped bell peppers until vegetables are softened and beef is browned. Drain excess fat.
Add minced garlic, dried oregano, dried basil, salt, and pepper to the skillet. Stir and saute for 30 seconds.
Stir in diced tomatoes, beef broth, and rice. Bring to a light boil, then reduce heat to simmer. Cover and cook for 20 minutes or until rice is tender.
Sprinkle shredded cheddar cheese over the mixture in the skillet. Cover with lid and cook until cheese is melted.
Once cheese is melted, remove from heat and serve hot.
